WThis is a simplified version of a drink from a new menu. This is a large-volume pre-mixed that's loaded with the essence of a Christmas time, which makes it excellent for your holiday party. Save the extra syrup you can use for morning drinks, sweets, or for additional servings of this cocktail.

Ingredients for the Clementine Cordial (makes 750ml)
300ml newly squeezed clementine juice
200ml recently pressed lemon juice
500g caster sugar
Ingredients for the Cocktail (produces 850ml, serving 10)
400ml decent vodka
100ml dry gin
150ml peach-flavored liqueur
200ml citrus syrup (see above)
A few cranberries, as a garnish
Mandarin essential oil, as a final touch
Instructions
For the Citrus Syrup: Place the listed components in a saucepan, bring to a simmer, agitating until the sugar dissolves. After that, turn off the heat allowing it to cool fully. Pour into a clean bottle, close it and store in the fridge, it will last for about a month.
Preparing the Premix: Pour all the spirits and syrup in a large bottle, allow it to infuse for one hour, then strain , ideally through cheesecloth, making it fully clarified.
To serve: Measure 85ml from the cocktail base into a stirring glass filled with ice, and agitate lightly for about 60 seconds until cold. Filter into a frosted cocktail glass or a similar vessel, decorate with some cranberries and complete it using a brief mist with the mandarin essence over the drink.
